Healthy Kid Treat: 'Animal Crackers'

I stumbled upon this creation trying to make some healthy and tasty 'animal crackers' for my son Kris. He is in love with stars right now so we rolled star cookies, but often make different animals. He loves making them and eating them... And they're vegan and gluten free!
Ingredients
  • 1/2 cup coconut oil
  • 1/4 cup coconut sugar
  • 2 T flax seed and 3 T water (flax egg)
  • 1/4 cup molasses
  • 1/2 cup millet flour
  • 1/2 cup sorghum/rice/tapioca/arrowroot blend
  • 1/2 cup almond meal (almonds ground fine)
  • 1/2 cup semi-ground oats
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
Step 1: Combine wet ingredients, including flax/water mixturephoto (50)
Step 2: Combine dry ingredients.
Step 3: Mix together. Step 4: Refrigerate for ½ hour.
Step 5: Roll into balls using either flour or parchment paper (it can be a little finicky but with small cookies cutters they turn out well)
Step 6: Cut out designs
Step 7: Bake 350 degree oven Step 8: Bake 8-12 minutes
